Summmer Veggie Pasta

 

ingredients

— 1 yellow squash & 1 zucchini
— 2 ears of corn, kernels cut off
— 2 plum tomatoes
— 2 lemons (juice)
— broth of any kind
— fresh basil
— 2 shallots

HOW TO Make


1. Cut up all your veggies so they’re ready to go.
2. Add shallots to a pan with oil, cook until fragrant
3. Add in tomatoes and broth, cook down tomatoes
4. Add in squash, corn, seasoning, add more broth
5. Mix in juice of one lemon, cook down a little
6. Turn off the heat, add in the pasta, a healthy glug of good quality olive oil, pecorino cheese and mix!
7. Add some torn basil and serve.
