Summer Corn salad

It all started when…

recipe

6 ears of sweet corn, boiled, then kernels cut off the cobb

1 pint of grape tomatoes

1 bunch of radishes

2 jalapeno

3 kirby pickles (normal cucumbers would work fine, too!)

1 avocado

1 red onion

2-3 limes

cilantro

salt, pepper

olive oil

HOW TO MAKE

  1. cut up all ingredients into similar sized pieces. The size doesn’t matter, just pick a size and make it consistent.

  2. add everything to a bowl, mix and season.

  3. juice lime, add in olive oil.

  4. serve and enjoy!
